Buckwheat noodles, or Soba, are a traditional Japanese food with a long history, perhaps even the longest history of any food in Japan! My name is Kasakawa Hikaru. I started making soba as a hobby, but then I started to get really into it. I am also in love with Japanese lacquerware, and in fact it was thanks to lacquerware that I became interested in making Soba in the first place. I asked a friend of mine to do some repairs to a lacquer item I had, and after he finished I watched him make soba noodles right in front of my eyes. It was so inspiring, I knew I had to try it for myself. I speak a little German, as I lived in Germany for about 5 years. By the way, I make all my Soba making tools by hand!

WHAT TO EXPECT

Japanese buckwheat noodles are delicious and healthy. But how are they made? Perhaps you never asked yourself such a question, but after trying this adventure you’ll be glad you did! Have you ever seen a chef spinning and tossing pizza dough high into the air only to catch it nimbly, and thought “Wow! I want to try that!”? Well, get ready to experience the Japanese version of that, pulling and stretching soba noodles into shape. In a beautiful location with views of Mt. Fuji and the Pacific ocean, the host will teach you all about how soba noodles are made, in addition to giving lots of information on Japanese lacquerware. Finally, you’ll also have the chance to take home a pair of your own handmade chopsticks, a perfect souvenir and memory of the day.

    Firstly, meet your host and hear an explanation of the experience.

  • Learn to make chopsticks.

    Craft your very own pair of chopsticks. You'll need them to eat your noodles!

  • The finished product!

    You can keep your chopsticks for yourself or give them to a friend.

  • Time to make soba!

    Get into the cooking spirit by putting on your soba making apron.

  • Make the dough using buckwheat flour.

    The host will teach you step by step how to make soba from scratch.

  • Knead the dough so it's ready to cut.

    Once it's ready you'll stretch it out, ready for cutting into noodles.
