Hiroshi SHIOMI

I am Shiomi. For over 40 years I have run an eel specialty restaurant called Shiotomi. If I may say so myself, Shiotomi is quite famous eel restaurants come. We even have patrons who visit Kyoto all the way from Tokyo just to enjoy the delicacies we make here. We purchase a fresh domestic eel that comes from all over Japan, which we coat in a special sauce and cook over over white charcoal resulting in a mouthwatering result. The cooking method creates such tender eel, some people say it’s like we seemed the meat. I would very much like for you to enjoy it firsthand.

You can find cooking classes almost anywhere, but it's pretty rare to find a place where you can catch fresh eel, prepare and cook it yourself! Your host for this cooking experience has over 40 years under their belt and will teach how to prepare fresh eel. After catching and preparing the eel yourself, add the special sauce and enjoy. Take the chance to not only enjoy eel fillet, but also the liver, a rare treat!

    I have had too many supermarket-purchased pre-cooked unagi in the past, that I have always wanted to prepare it from stratch. Not a lot of agencies targetting foreigners offer this, so I was glad that I found it on Wow Japan!, and they managed to organize it for me.

    My interpreter Megumi has been super helpful in real-time translation, and organizing the necessary. She's very dynamic and very funny to hang out with.

    Seeing the master in action is of course the most amazing part of the experience. Having 40 years under his belt, his preparation (that I caught from the tank) was flawless and in no time, with a perfectly fileted and boned eel.

    I learned a lot more about the preparation details (the why and the how), got a chance to grill it myself, and of course, the resulting unagi don was the best I have ever tasted. The Kansai way of preparing leaves the skin particularly crunchy and tasty.
