Hi, I am Arai from Saitama-ya which is a family owned Tofu shop. Everything here is made from scratch, that means you will get the chance to see how tofu is made from soybean to final product. We will also show our latest tofu recipes such as black tofu made from black beans, soy milk pudding, thick fried tofu, and vegetarian stuffed fried tofu cake. Tofu is a major part of Japanese food culture, so this is a unique opportunity to see how tofu is made in a traditional and organic way.

    It’s amazing how much one takes for granted in daily life

    It’s amazing how much one takes for granted in daily life, even when living and working in a different culture. Take tofu, for example; I serve it, or prepare dishes with it regularly, but had no idea how it was made, other than it being derived from soybeans. So I decided to join a small group of participants on Arai san’s tofu-making tour in Ohanajaya, to learn a little more about this essential part of Japanese cuisine. The tour was very hands-on, taking us through the various stages of the tofu-making process right up to tasting the final product with a variety of savoury and sweet condiments. In this, Arai san was ably assisted by our guide and translator, Roland, so we were able to ask any questions about the process or Arai san’s life’s work. It was a fascinating, fun afternoon. But I think what I remember most about the tour was the incredible flavour of the tofu we made by hand; I’ve always bought supermarket brands because they’re cheap, but after Arai san’s course, supermarket brand tofu seems completely bland.
