Makoto ANDO

Hello, my name is Makoto. It’s been 32 years since I first began making soba noodles. I am the fourth generation in a family of soba makers, which all started with our first restaurant “Owariya” near Kanda Myojin Shrine. In 2010, I pursued and received my certification as an “Edo Sobalier” (like a sommelier, but for soba), thus registering my restaurant in the Edo Sobalier association. I am also a director of the “Tokyo Noodles Union”, and take pleasure in guiding my younger associates on how to make the best possible soba noodles. Finally, I am an exam committee member for the noodle cuisine technique and skill evaluation exam, but still, keep my important connections with the local soba restaurant association in my hometown. I would love for you to join in and get a true taste of Japanese culture with soba noodles!

In this culinary experience, you will get the rare chance to learn how to make authentic soba noodles under the supervision of a professional soba chef. Take this opportunity to enjoy the taste of soba noodles made by your own hands. The venue, an operating soba restaurant called “Ogura-an”, is located about a 5-minute walk from JR Otsuka station. Upon your arrival, you will begin the preparations needed for making soba and get acquainted with your host. After going over the basics and watching your host’s demonstration, it’s time to jump into it. Enjoy the friendly atmosphere as you chat with your host throughout this experience. Once you finish making the noodles, cook them and enjoy with company. There is no such thing as failure here. Thick or thin, your soba noodles are sure to be one of kind! Don’t pass up the opportunity to also taste delicious tempura, which goes very well with soba. Finally, don’t forget to ask about the restaurant's hidden menu. An experience not to be missed by any connoisseur of Japanese cuisine.
