Makoto ANDO

Tokyo Hello, my name is Makoto. It’s been 32 years since I first began making soba noodles. I am the fourth generation in a family of soba makers, which all started with our first restaurant “Owariya” near Kanda Myojin Shrine. In 2010, I pursued and received my certification as an “Edo Sobalier” (like a sommelier, but for soba), thus registering my restaurant in the Edo Sobalier association. I am also a director of the “Tokyo Noodles Union”, and take pleasure in guiding my younger associates on how to make the best possible soba noodles. Finally, I am an exam committee member for the noodle cuisine technique and skill evaluation exam, but still, keep my important connections with the local soba restaurant association in my hometown. I would love for you to join in and get a true taste of Japanese culture with soba noodles!
