Hiroshi SHIOMI

I am Shiomi. For over 40 years I have run an eel specialty restaurant called Shiotomi. If I may say so myself, Shiotomi is quite famous eel restaurants come. We even have patrons who visit Kyoto all the way from Tokyo just to enjoy the delicacies we make here. We purchase a fresh domestic eel that comes from all over Japan, which we coat in a special sauce and cook over over white charcoal resulting in a mouthwatering result. The cooking method creates such tender eel, some people say it’s like we seemed the meat. I would very much like for you to enjoy it firsthand.

The place is fish restaurant called “Shiotomi”, located in Rokujijo Uji Kyoto. The eel meals are well-known, and some customers even come from Tokyo to try our meal. The fresh eels are from Yoshida, shizuoka and Tahara, Aichi, and are cooked with the sauce with a secret recipi and Bicho coal. Those who try them for the first time says that “it is like steamed !”. THe fresh eels are cooked by a chef with more than 40 years of experiences.

    I have had too many supermarket-purchased pre-cooked unagi in the past, that I have always wanted to prepare it from stratch. Not a lot of agencies targetting foreigners offer this, so I was glad that I found it on Wow Japan!, and they managed to organize it for me.

    My interpreter Megumi has been super helpful in real-time translation, and organizing the necessary. She's very dynamic and very funny to hang out with.

    Seeing the master in action is of course the most amazing part of the experience. Having 40 years under his belt, his preparation (that I caught from the tank) was flawless and in no time, with a perfectly fileted and boned eel.

    I learned a lot more about the preparation details (the why and the how), got a chance to grill it myself, and of course, the resulting unagi don was the best I have ever tasted. The Kansai way of preparing leaves the skin particularly crunchy and tasty.

    Catching, cooking, and eating eel. An amazing experience!

    I booked a large variety of tours during my stay in Kyoto (bus tours, walking tours, cooking, samurai workshops etc) but this one was, by far, my favourite.

    You start by fishing an eel out of a large tank, which can be a fun experience. Next, your host teaches you how to prepare the eel for cooking. You get enough of a hands-on demonstration to experience the preparation and cooking process, but without having to deal with any messy parts. Finally, the host prepares a full meal for you, complete with the eel that you helped cook and a few other sides. The meal was delicious! I had only tried eel on sushi beforehand, but this experience has opened my eyes (and tastebuds) to the deliciousness of a restaurant-quality eel dish.

    The activity is conducted in a small restaurant, owned and operated by a husband and wife team. They are personally involved in the tour, so you are also getting the chance to learn the preparation of a restaurant-quality meal by true locals.

    The tour guide, Tamaki, was well-organised, spoke fluent English, and helped to translate for our restaurant hosts. She was also very helpful in providing tips for the Kyoto area and other insights into Japanese life.

    This is one of the best ways to have a local experience, learn some cooking techniques, and try a dish you may have never had before (but will want again!). This was one of the best tours I have ever booked!See moreSee less
