Hi, I am Arai from Saitama-ya which is a family owned Tofu shop.
Everything here is made from scratch, that means you will get the chance to see how tofu is made from soybean to final product. We will also show our latest tofu recipes such as black tofu made from black beans, soy milk pudding, thick fried tofu, and vegetarian stuffed fried tofu cake. Tofu is a major part of Japanese food culture, so this is a unique opportunity to see how tofu is made in a traditional and organic way.

It’s amazing how much one takes for granted in daily life
It’s amazing how much one takes for granted in daily life, even when living and working in a different culture. Take tofu, for example; I serve it, or prepare dishes with it regularly, but had no idea how it was made, other than it being derived from soybeans. So I decided to join a small group of participants on Arai san’s tofu-making tour in Ohanajaya, to learn a little more about this essential part of Japanese cuisine.
The tour was very hands-on, taking us through the various stages of the tofu-making process right up to tasting the final product with a variety of savoury and sweet condiments. In this, Arai san was ably assisted by our guide and translator, Roland, so we were able to ask any questions about the process or Arai san’s life’s work. It was a fascinating, fun afternoon.
But I think what I remember most about the tour was the incredible flavour of the tofu we made by hand; I’ve always bought supermarket brands because they’re cheap, but after Arai san’s course, supermarket brand tofu seems completely bland.
All in all, the tofu tour is one any lover of traditional Japanese cuisine would enjoy and I thoroughly recommend it.

Before I went on the tour I thought that making tofu must be hard, but during the tour, I thought that it’s pretty easy… until I had to do it myself! haha, it’s very different between the masters Tofu and the one I succeeded to make. Amazing experience for Tofu lovers
My brother and me booked the event to learn more about how tofu is made traditionally.
The tofu tasted so different from the tofu available in Europe. It was much more delicious, with a slightly sweet and silken touch.
Additionally, we ate the Okara and the soy milk that we produced along the way, which was surprisingly a culinary delight. Arai answered all the questions that we had during the experience. The interpreter did a good job as well.
Next time it would be nice to taste all the different varieties of the Tofu produced by Arai.

Learning, Having Fun and Happy Tummy!
It's so easy to get there, coz there's a guy who led us to the place. The store owner are so nice and the place was really really clean. In my memory, every tofu making workshop couldn't be as clean as this one!
We were making the tofu all by ourselves, the owner is patienly teached how to mix the bean, cook the soybean milk and how to ferment it into tofu. He also answered all of my curiosity cleary. Thank you so much for this wonderfull experience!See moreSee less
